Tropical Chicken Grillers are a grilling favorite that’s easy to make at home! These tasty bundles feature chicken breasts wrapped around ham and pineapple, secured with bacon. Once I discovered how simple this chicken griller recipe is, I stopped buying pre-made versions. Drizzle with Teriyaki, Whiskey, or Pineapple Bourbon BBQ sauce for extra flavor!
Ingredients needed:
- boneless, skinless chicken breasts
- diced ham
- pineapple chunks (fresh or canned)
- thick-cut bacon strips
- paprika, sea salt, black pepper
Grilling instructions:
Sandwich chicken breasts between plastic wrap on a hard surface. Flatten with a rolling pin until even, but not too thin. Use your hand to check for uniform thickness.
With the smooth side down, place ham cubes in the center of each breast. Top with pineapple chunks.
Roll up the chicken to enclose the filling, securing with a toothpick.
Lay two bacon strips in a cross shape. Place the chicken roll on top and wrap one strip around to secure. Use the second strip to wrap in the opposite direction, fully enclosing the chicken. Season with paprika, salt, and pepper.
Grill seam-side down on preheated grates for 10 minutes. Flip and cook 10-15 minutes more until internal temp reaches 170°F. If bacon shifts, carefully reposition it or leave toothpicks in while grilling.
Let rest 5-10 minutes before serving.
Oven-baking method:
Place seasoned grillers in an uncovered baking dish.
Bake at 350°F for 40-50 minutes uncovered.
